Microbiologists Attack Salmonella at Its Source

To keep salmonella from contaminating our kitchens and causing food poisoning, food microbiologists are trying to make chickens salmonella-free in the first place. Researchers inject day-old chicks with probiotics -- "friendly" bacteria that produce antibiotic-like substances in the intestine that kill salmonella. The same technique is being used to prevent dangerous strains of E. coli from infecting cows.
